Sour Cream Chocolate Cupcakes and Chocolate Sour Cream Frosting

I was browsing for a recipe to use up my sour cream and I remembered this chocolate cupcake recipe that I bookmarked a while ago. After I made it, I was glad that I remembered this recipe. These are the best chocolate cupcakes I have tried baking so far; my brother rated them a 9.2.

The recipe resulted in denser cupcakes, with a deeper chocolate taste. The frosting was also very good, but mine were a bit grainy. Maybe you’re supposed to use a mixer, instead of hand mixing? I also think I baked them longer than I was supposed to because although the cupcakes were really soft after I took them out of the tin, after they cooled down they developed “crusts” (only on the edges though). But after you let them sit out for a day, they become moist again.

I made this all the way back in February. Just this past Saturday I made a birthday cake for my brother. Looking back at this recipe, I'm surprised by the similarity between the cake recipe I used and this cupcake recipe. I'll be sharing that recipe tomorrow hopefully, my blog's 1st birthday! I was shocked when I found out that tomorrow is the anniversary, because I always thought I made my blog in May. How forgetful I am!

Note: You can reduce the sugar by 1/4 cup without any consequences.

  5. I love the crusts which form on cakes :D I usually peel them off and eat them while they're hot....haha :D I need to try this some time- I've always wanted to try using sour cream in chocolate cakes- your cupcakes look so yummy!

  6. Your brother's rating for these cakes is too critical, should be more than 9.2. You know, siblings are typical critical with each other. I have heard about the wonder of sour cream in cake making but didn't use it as often because of its slight sourly taste and also high fat content.

    Von, :D I love the insides of a cake; you can have my crusts. lol I love peeling off mantou skin, as weird as that sounds. These cupcakes are really easy to make, so they won’t take up too much of your time. Sour cream in cake = very moist.
    For some reason I thought I started it in May….:D I never knew I would enjoy blogging so much either.

    Zoe, That’s a good point. Whenever my brother gives me ratings at 9 or above I am quite satisfied. =) He is quite critical, but then I always know he’s honest. Unlike when I share treats with some friends, they may give compliments out of politeness (maybe). Sour cream is amazing in cake making. Try it out one day. You should try making Honey Bee Sweet’s sour cream marble cake. It was delicious and the sour cream wasn’t notable. (I didn’t think it was)

  8. hahahaha cold weather is awesome :D i don't mind suffering in the cold, but in the heat...that's a bit much.

    btw i made those cupcakes! was easy as and it's really moist! made minor adjustments to the mixture (reduced 1/2 cup sugar, halved the icing mixture: increased chocolate to 100g, more icing sugar, more butter so it was pipeable, tiny bit more than 1/4 cup sour cream)

    Nice adjustments! I'm glad you tried reducing the sugar even more to see how it went. I wasn't brave enough to do that. They look very cute! Nice decorations. :) Thanks for trying them out
