I'm not sure what the baking soda does, but I personally think they're chewier this way. And I agree that the water could be cut way back, it was a waste but then again at least the water and baking soda don't cost much. <br /><br />Your pretzels turned out great! I'm not really sure what difference it makes, but I know that the baking soda water gives it a pretzel like taste. I never realized before that that specific taste was from baking soda though.
